I love Boudain, one of my favorite things to do with it is to cut a cross in both ends of a pork loin and stuff it with the insides of the boudain, it tastes great grilled. Also if you ever get down to Lake Charles, LA there is a grocery store in town that makes the boudain there, just ask the locals they will point you in the right direction

The place on LA 14 south of Legion (if it's still there) or the Market Basket?

...go to Wheelers (I-35 and SE 44th East side of Interstate on south side of 44th) and give theirs a try - their own recipe. I'm betting you'll never go back to zummos again.

Haha, my east coast roots are showing through. Which is why I've only had limited exposure to Boudain. Just even heard of its existence last year. Had it a few times since. Maybe I won't put sauce on it. The other times I had it there was no sauce but I love me some franks. Thought I'd give it a shot.
