When I want pancakes, I do not want to wait 12 hours......
Now days I prefer my home grown organic soft red winter wheat.
Although I am not crazy about the work it takes to get it from the field to my grain mill without a combine!
Unbelieveable difference in flavor and texture.
And milling whole wheat flour needs to go in the freezer so it does not go rancid, unless you only mill what is needed.

You'd be surprised. I didn't know what real maple syrup tasted like until I left home.
