Put a 20lb turkey into a brine about 2pm today. Supposed to be one hour in the brine per pound of bird.
I'll be putting it into the pellet grill tomorrow morning for a low and slow cook.
This bird will be sliced up and vacuum sealed in portions for sandwiches, with the carcass put into a stock pot to be boiled with the broth frozen for later use vs buying store bought broth.

Hour 6, done and resting. Most moist turkey breast we have ever had.

Well, our hopes of having the original database completed yesterday ended because of time and the arrival of fog. We were just about 7 miles from having the original done when we had to stop. Fog again today, but we can work up north this morning, and by the time we get further south, maybe the current fog coverage get burned off.

We could still be done within the next couple of days if the weather cooperates. Then send in the data and wait for it to be QC'ed.

It was BEAUTIFUL when I was outside taking care of critters this morning. Spent a bit more time with them than usual. I should do that more often.

Dawg found an egg one of the hens laid in the bushes. Broke it trying to bury it for later. Decided he didn't want to fool with it real quick after that. Seems it has been out there a while. :nolike::bigeye::violin::bolt:

Mr. Beaky is turning into quite the little ****. As soon as he is big enough to turn out he is on his own. Lol Seems domestication isn't in his DNA. 🤷

And just so y'all know there is NOTHING on the planet harder that caramelizing onion slices. I swear these damned things are NEVER gonna get done. 😖
Patience is a virtue! Right? Takes a minimum 45 mins if you keep it low n' slow(depending on how full your pan is). Might can cheat with a small amount of sugar.

Ok I "might" have put too much onion in the pan. I've tried EVERYTHING. I salted them and squeezed out a little water before I put them in the pan. Low and slow. Added a little sugar ... Turned up the heat a little ... At this rate they will be ready to make onion gravy for NEXT WEEK'S roast -- not the roast I have in the crock pot right now. 😬😬😬

I dunno ... Onions is the ONE thing I am no good at cooking. They NEVER caramelize for me quick ... Or even moderately quick. Come to think of it they don't even DO IT SLOWLY. Argh ... I think I may switch over to mushrooms. Then Grumpy will be bitching instead of me -- he "doesn't like" mushrooms. 🙄🙄🙄 Like he can taste the difference once it goes in the brown gravy ... 😏🙄🙄🙄
