Ok I "might" have put too much onion in the pan. I've tried EVERYTHING. I salted them and squeezed out a little water before I put them in the pan. Low and slow. Added a little sugar ... Turned up the heat a little ... At this rate they will be ready to make onion gravy for NEXT WEEK'S roast -- not the roast I have in the crock pot right now. 😬😬😬

I dunno ... Onions is the ONE thing I am no good at cooking. They NEVER caramelize for me quick ... Or even moderately quick. Come to think of it they don't even DO IT SLOWLY. Argh ... I think I may switch over to mushrooms. Then Grumpy will be bitching instead of me -- he "doesn't like" mushrooms. 🙄🙄🙄 Like he can taste the difference once it goes in the brown gravy ... 😏🙄🙄🙄

And....the suspense is killing me! Ever carmelize? :)

We had some thunderstorms here in Rhode Island last night around 3:30 am. Rain delay gave us some setbacks this morning, but we got all of the original work database of roads done and today finished the initial "re-do's" of previous records. The last of our work on the hard drives has been sent in, so now we wait for them to quality check that data. If all is good, we head home.

FINALLY ... 🤣🤣🤣🤣 Roast was fork tender, gravy and onions was DELICIOUS and mashed potatoes were perfect. Tossed in some warm homemade rolls and dinner wasn't too shabby ...

Except for ...

I have been on a strict elimination diet for the last several weeks. I'm trying to figure out what all is making me so sick. Mashed potatoes ain't it. An occasional dinner roll ain't it. BUT ... It appears that roast beef gives me absolutely HORRIBLE heartburn. 😳 I mean one bite and that was all it took. I STILL have heartburn bad enough I'm snacking on TUMS 24 hours later.

I've heard about people who've had Lyme (I've never been diagnosed but let's face it -- I grew up in rural areas working cattle, playing in "the woods" and hanging out with critters that carry fleas and ticks. Not to mention the spider bites and cat bites I've "acquired" over my few years on this planet.) developing an aversion to beef but damn ... And maybe that explains some of the other issues I've been having. Me and the functional doc are gonna have a nice, long chat Thursday ...

We talked to a waitress/cashier at Lamberts (north of Branson) a couple years back that couldn't eat beef or pork due to Lyme's disease...not sure I would take that well!

Let me tell ya, if you felt like I did after that one bite (I didn't even swallow the whole thing. Spit most of it back out.) you'd not want another. I was surprised at just how bad it was and how quickly things went south.

I've had bacon. That didn't bother me, but then I've also noticed that I can eat some things occasionally and they don't bother me but if I eat them more than once a week or so I start having trouble. It's been an interesting journey so far -- but I don't care. Whatever I have to do to get to feeling better. And I do mean whatever.
