I am trying to figure out to grill/smoke sausage. I bought some ekridge smoked sausage (pork, turkey, beef) and cooked it and it was terrible. Did I buy the wrong kind?
Are you talking about the fully-cooked kind from the store? If it was fully-cooked, then you can't do much besides heat it through and sear the outside. If you tried to really cook it, it probably came out like jerky.
If it was a true raw sausage, then I dunno what was wrong, maybe you could tell us what you did to it? Did you smoke it for 18 hours at 180 degrees, or just cook it through on the grill, or what?
Try something like Johnsonville Brats. I like them cooked on the grill.

This, without a doubt. Cook 'em till they start to split, but be careful not to overcook them. Dry sausage is a sad thing. A little grilled brat, a little brown mustard, a little saurkraut. Sooooo nice.
