175* is too high of a temp to take the turkey off the smoker. The ideal temp is 165*. When you take the turkey off the smoker it continues to cook and the temp continues to rise in the short time you give the turkey time to rest in the cooler. So taking the turkey off the smoker at 156-158* is more ideal because you will reach 165*, the ideal temp, in the cooler.
