I've done spicy pickled okra got it from food network its pretty good but my grandmas is better

3/4 pound fresh okra
4 1/2 cups cider vinegar
2 cups water
3 cloves chopped garlic
1/4 cup crushed red pepper flakes
1/4 cup smoked paprika
4 1/2 teaspoons salt
1 tablespoon Szechuan peppercorns (optional)

I have one that has been a big hit around my house for some pickled sausages
get you some beef lil smokies or all beef hot dogs.
a wide mouth jar.. we do pint sized.
pickling spices
black pepper corns
red pepper flakes
Franks hot sauce
3 or so cloves of garlic
white vinegar

pack two layers of dogs in the jar
add some pickling spice, pepper corns, pepper flakes and a shot of hot sauce
repeat until the jar is packed full and tight.
add vinegar to the top of the jar and give it wiggle to get the air out.
put the lid and ring on it and stick it in the fridge for about a week or longer ( the longer it goes the hotter it gets ).
you can add some japlinos or other hot peppers is you like.

my sis insists that you run a tooth pick thru each dog to get the flavor inside the dog but I am too lazy for that.
She also crushes the garlic cloves first.

the last batch I made I added a cap full of liquid smoke and they were pretty tasty.

We eat em up pretty fast but they should last you about a year or so in the fridge.... if you can find low fat beef sausages then you might be able to push the time.
