I used to smoke beef tongue like a brisket. It was really good. No one knew it, till I told 'em.

My Dad used to say "I wouldn't eat that beef tongue, you don't know what it has licked".:tounge2:

Ok, i have been seasoning the tongue with mesquite jerky seasoning for 24 hours and i'm about to put it in the dehydrator...we'll see how it goes!

I don't get it. It is beef, cook it the same way you cook beef.
Every cut has its own flavor, why go out of your way to kill the flavor?
Years ago I was in Montreal, I went to a French restaurant and one of the items on the menu was beef tongue with mushroom sauce over rice. The sauce was Stroganof type, creamy. One of the best meals I ever had in my entire life. I never go for seconds in a restaurant, in that case I made an exception. Too bad I never wrote the address down.

Beef tongue is delicious just boiled then skinned and sliced like the best roast you ever ate.

Don't give me no tongue...it has been in a cow's mouth...give me an EGG.!

Here's how I cook it to make tacos.

Quarter the tongue then throw it in a crock pot with about an inch of water.
Add 1-2 whole bay leaves depending on tongue size.
Add light salt, pepper, garlic powder.
Cook on low for 6-8 hrs.
Pull the skin (taste buds) off and use a fork to shred it up.

I put this with some homemade guacamole and some sour cream and it is delicious.
