Tongue in a hole
Depending on how many you are preparing at one time will determine the size of the hole
Start by digging a hole in the ground.
(Carefully set the sod off to the side if you want to replace it)
Using seasoned hardwood or commercial briquettes build a pretty good fire in the hole. You are going to want enough coals to able to shovel some of to the side and use them to cover the prepared tongue.
You will want to wait till the fire has burned down to coals, this will take longer if using seasoned hardwood.
You are going to want about 2-3 inches of coals under the tongue and another 2 inches over it while it is cooking.
Once yo have a bed of coals ready place the prepared tongue on the lower bed of coals and carefully cover with the remaining coals.
Shovel a thin layer of dryish dirt over the coals.
Cooking time is approximately 3 hours.
To prepare the tongue for cooking
Tongue can be seasoned to preference as well as using inject-able marinades.
Wrap tongue in thick sliced bacon hold in place with toothpicks if needed.
Quarter up 2-3 medium onions, 2-3 large bell peppers and a couple of jalapeno peppers, lightly salt and pepper and add any other seasoning you think might be good.
You can also add potatoes cut into wedges or whole new potatoes (I prefer to use the red skin new potatoes)
Wrap beef tongue and vegetables in 3 layers of well soaked banana leaves or if you can't get them 3 layers of heavy duty aluminum foil will work but it isn't as traditional.
In the prepared fire pit lay a very thin layer of dirt over the bottom 2-3 inch layer of coals. Place the package on that and then gently shovel the coals you set aside over the top of the package. add a thin layer of dirt over the coals and you are done for about 3 hours.
After 3 hours carefully pull the tongue out of the ash hole, gently because you don't want to tear the wrapping and get dirt on your food.
carefully unwrap the tongue and vegetables, remove the bacon and vegetables from the wrappings and throw that nasty hunk of meat to the dogs and eat the bacon and veggies.

I would imagine just add in the step of throwing everything into a tortilla and you have what he suggested.
Ingredients:
1 beef tongue
5 fresh green chile peppers
1 tablespoon olive oil
1 white onion, sliced thinly
4 cloves garlic, minced
4 small tomatoes, halved and sliced
2 (15 ounce) cans whole kernel corn, drained
salt to taste
Directions:
1. Wash tongue and place in a large pot of water to cover. Simmer until no longer pink, about 50 minutes per pound of tongue. Remove from water and let rest until cool enough to handle. Peel skin from tongue and trim gristle. Cut into 1/4 inch slices.
2. Place whole peppers in a skillet over medium-high heat and roast, turning, until all sides are charred. Let cool, rub off skins. Remove stems and seeds.
3. Heat olive oil in a large skillet over medium heat. Saute chile peppers, onion and garlic until onion is translucent. Stir in tongue and continue to cook until tongue is brown, 5 to 10 minutes. Stir in tomatoes and cook until limp, 5 minutes. Pour in corn and heat through, 2 to 5 minutes. Season with salt. Serve immediately.
