I don't mind calf or lamb fries. Pretty tasty. Liver is pretty good if it is fresh and not cooked too done. But tongue isn't very good IMHO. Maybe it was the way my grandma fixed it but it was kinda like gizzards to me. No flavor. Didn't care for her brains and scrambled eggs either ... That woman never threw NUTHIN' out ... :uhh:

For a beef tongue virgin like myself, is there any other cut or organ you can compare it to when it comes to flavor and texture?

I'm curious.

Well i've never had beef penis or anus (and never will) but if you have, your bound to like the tongue:w000t:
Actualy its hard to esplain. I guess its like a roast with NO fat at all. Completely lean. As far as texture, i can't say because mom always ground it into a sandwich spread.

Those are habits learned from hungry times in the depression era. My grandpa used to boil the heads off the squirrel to get what little meat was on them and make squirrel head gravy...

Hmmm ... that might not be so bad maybe. My grandma boiled it with vegetables (like when you stew a chicken) and then sliced it really thin. Not much flavor and kinda chewy ... like gizzards ... My grandpa thought that stuff was heaven on earth with ketchup and sourdough bread and pickles ... Me, ehhhh, not so much ... blah

Yep ... I gotta say I wish I had paid more attention to her stories now, God rest her soul. She was in her 90s when she passed ... I always figured she was gonna outlive us all so she could dance on our graves ... Actually it was something else she used to tell us she was gonna do, but it really wasn't very nice ... :popcorn: She meant it in the kindest, gentlest way possible though. That woman was sumthin' else.

If you have a meat grinder, try it sometime. Use your favorite tuna spread recipe but substitute the tuna for ground tongue. I think mom uses mayo, pickels, celery and an egg or 2. Serve it at a party and I promise you it will be the first thing to go.

I wonder if the server would warn the guests they're about to eat tongue, or wait till after they've scarfed it down? I can just picture their faces when told afterward what they just ate ;)

You know how I got my kids to eat liver when they were little. I cut it up into strips, floured it and then fried it with some bacon. Served it with mashed potatoes. Told the kids it was bacon goulash ... :rotflmao: My middle son would pick the bacon out and eat the "noodles" ... :rotflmao::rotflmao:

They would even ask for it on "special" occassions, silly boys ...
