Hey!! A fellow cheese smoker! Been smoking cheese every fall for about 30 years. I smoke about 20 or 30 pounds and give it out for Christmas gifts. I use mild cheddar in the 2 pound brick and cut it lengthwise. Cold smoke about 6-8 hrs.
How do you do that? Thought I'd smoke some cheese using just a smoke tube.
Did it for an hour and it was so bitter that it was not edible.

Everyone has different ways of smoking things. Cheese is sensitive, slow absorbing at the cool temps you have to do it at. If you are going to do a large brick, it needs very little smoke for a long smoke time to slowly absorb or the smoke will collect on the surface and be bitter to me also.

Myself, I was never very successful at doing it that way. i like a lot of smoky stuff, prob average smoking something every week, just took a pork butt out this morning. Everything is bitter with too much smoke for me. For that reason is why I take several standard store 1lb bricks of cheese and slice it into about 3/8 inch slices and cold smoke as much as will fit on my rack space at a time for about 15-20 min max for small serving sizes that people are going to cut off anyway. I could then stack them back together if I want, but usually I just lay flat in quart zip bags (air sucked out with a straw) and refrigerate till ready for use. That gives me a light smoky flavor on many sides of each bite. Every piece of equipment will be different as to how much time you need to expose it to the smoke, what kind of wood you use (I prefer hickory but have used pecan which is lighter and sweeter) which will take some experimenting.

I have this Pit Boss grill/smoker and have done cheese twice and both times were successful. It has the ability to cold smoke things like cheese by way of a connecting tube between the two sides. I put the cheese in the grill half on a wire rack, fire up the smoker at 180°-190° and open the gate allowing the smoke to enter but not the heat. An endeavor much more suited on a nice cold day and nothing I’d try in the summer. Also make sure you use a good firm cheese because until you get the feel for things, which I’m still learning, no need to make things more complicated.

Going to change things up a bit.


I was wanting some brownies.
Happened to have a Betty Crocker box mix in the pantry.

Instead of the box directions
1 box mix
2 eggs
1 can sweetened condensed milk (Eagle Brand, I use store brand)
1 tsp baking powder
A handful of walnuts

Mix on high for 2 minutes.
Pre heat oven to 350°
Grease 9x13 glass pan
Bake 30-40 minutes (38 min for mine)
Makes a crunchy, chewy edge and gooey middle.

Topped with a thin layer of white, vanilla icing.

My father's Bacon, Ham, Cheese casserole, or Heart Attack on a plate according to my wife. Has onions, tomato sauce, stewed tomatoes and noodles. It taste soooooooooo good. If I am laying in the hospital dying, I want a plate of this before I go. If you are going to die, might as well die happy.

I did cut the amount of noodles in half to make it healthier. I want to add mushrooms but will have to wait until the wife is in the nursing home. :P

Maybe add a layer of sliced zucchini instead of the mushrooms

Add the zucchini in place of noodles, then add shredded carrots and EXTRA mushrooms.
I agree about the zucchini in place of the noodles but carrots are high carb. Now the extra mushrooms is a winner.

This thing has a pound of soft cooked bacon, pound of chopped up lunch ham, pound of Colby Jack cheese, onion, stewed tomatoes, and lots of tomato sauce. Darn it is good.
