How do you do that? Thought I'd smoke some cheese using just a smoke tube.Hey!! A fellow cheese smoker! Been smoking cheese every fall for about 30 years. I smoke about 20 or 30 pounds and give it out for Christmas gifts. I use mild cheddar in the 2 pound brick and cut it lengthwise. Cold smoke about 6-8 hrs.
Did it for an hour and it was so bitter that it was not edible.
