I am gonna try brining next time. Dinner was great last night, but I am gonna ease off on the rub... too much last night. For my taste, the lighter amount was better. I think I may have cooked too long on the spareribs, too... they weren't dry, but not as moist as the babybacks. The spares got almost 8 hours in the smoker, I think, which was a bit too much. The babybacks got about 4.
