There are ‘fresh’ rolls that are raw and cooked rolls. The Naughty Girl cooked roll at Sushi Bar is amazing

I first tried sushi back in the 90s when I was stationed in Seattle. I ate a lot of sushi there, in Dallas, and OKC. We usually go to tokyo japanese on western. Like the raw and cooked
