I recommend you start with 38 specials.
The 357 dies will load 38 specials.
That gives some room for learning errors.

Straight wall cases have an extra die in the set because you can't open the case neck and size the OD in 1 die, like you can with a bottle neck.

The remaining 3 calibers are all bottle necks used in repeating actions.

1) find a brass catcher for semi auto brass flinging toys.
2) understand how to adjust the dies to prevent case head separations after several reloadings.
3) Get more than one reloading manual and compare data before using it. Misprints happen.

Reloading manuals -
Powder makers publish data for a weight of bullet and their powders.
Bullet makers publish data for their bullets, and lots of different makers powders.

If your loading hunting rounds, be sure to look at the external ballistic tables and compare your muzzle and terminal velocity at maximum expected range to the velocity's your selected projectile is intended to perform at on the game your hunting.
That 7.62 x 39 is not going to perform well with a bullet designed for a 300 win mag.
