Don't use pickling spice. Vary quantities of this to your liking. Need a gallon jar.

3 dozen hard boiled eggs, peeled
1 quart distilled white vinegar
1 sliced onion
1 tablespoon mustard seed
1 tablespoon dill seed
1 tablespoon black pepper
6-10 cloves garlic
16 oz. jar of jalapeños - juice only
3-4 fresh jalapeños sliced
4-6 splashes hot sauce, or more if you want more kick

The jalapeño slices are fantastic.
awesome. I got some quail eggs coming and ill try this.

I use to eat the crap out of quail eggs as a kid in the Philippines. They were sold by side vendors at rest stops. 10 eggs and a packet of salt for around .25 cents (US)

Where can I buy some around here?

I have bought the pickled quail eggs at one of the truck stops along I40. It's one of the new ones in the Weatherford area. The one that looks like a Tee Pee.

That recipe made me crave some pickled eggs real bad. I love them, even though they do bad things to my gut.
