I got a flyer in the mail this week that says the CashSaver on south Peoria has USDA Select beef brisket for $3.17/lb (with fine print that say "plus 10% added at checkstand").
Select being the lowest grade but enough time and technique on the smoker will get it tender. Typically 25-30% loss when trimming all the fat off so the actual price of the meat is much higher per lb for the finished product.
Brisket was .99 per lb when we we’re doing the BBQ competitions.

I picked up a tri-tip at the local grocery store the other day. $3.99 a lb vs $4.99 for brisket. It was well marbled so I marinated it for three hours this morning, put it on the pellet grill at 250* for three hours uncovered with Head Country seasoning, then used the Texas crutch for an additional 2.5 hrs.
Dang that thing was good. Literally fork tender.
Don’t know if I’ll ever buy a brisket again that’s more expensive, and has 30% waste after trimming the fat.
Didn't think of looking at tri-tip.
I'll have to keep an eye out.

tri tip is one third of the brisket. waste of meat in my opinion. too small to feed many people. I like packers. Get them at US Foods in OKC. 2.69 a pound. make a trip and bring your wallet and a cooler. US Foods is worth the day trip.

How so is it a waste of meat? It has nothing to do with the brisket.
The tri-tip is a triangular cut of beef from the bottom sirloin subprimal cut, consisting of the tensor fasciae latae muscle.

Prime brisket was $3.49/lb today. I got an 8.9lb as there are only four of us that will eat on it.

Am I about to get a Costco membership just for brisket? lol
