Typically 25-30% loss when trimming all the fat off so the actual price of the meat is much higher per lb for the finished product.I got a flyer in the mail this week that says the CashSaver on south Peoria has USDA Select beef brisket for $3.17/lb (with fine print that say "plus 10% added at checkstand").
