I start light and taste as I go. However, I've made this enough over the years that I usually come out really close the first go around. Also, I don't use capers --- never liked those.

Never had any goose Jerky. If it's good it might give me incentive to go hunting them. How about duck jerky? Ever do that?
There is a mix of duck and goose in this batch, I love waterfowl jerky! I have some whole plucked birds in the freezer, but if I get several of them I usually make jerky
