The chuck in a bag is called Sous Vide. We use the redneck version on real steaks that really tenderizes them and gives them the perfect internal temp.

The redneck version should be right up my alley. How is that done?

I have seen thermostats advertised for plugging a crock pot into them for sous vide cooking.
The crock pot is full of water and has a plastic bag with the meat sealed inside.
