Cold weather = ham/beans and cornbread. I don't have a good recipe for some crockpot cooking. Hope someone will share a good recipe with me. Thanks in advance.:goodmorning:

Crockpot chili

Ingredients:
•1 lb. ground beef, browned and drained of fat
•1 lb. hot sausage ,browned and drained of fat
•1 can red kidney beans (optional)
•1 large can stewed or cooked tomatoes
•1 can condensed tomato soup
•1/4 cup water
•1 teaspoon cumin
•1 onion, diced
•1 teaspoon garlic powder
•1 tablespoon chili powder
•1/2 teaspoon salt
•1 tablespoon crushed red pepper flakes (hot)
•1/4 teaspoon black pepper

Preparation:
Combine all ingredients in crockpot; mix well. Cover and cook chili on low about 8 hours. Add more water if you like your chili thinner.

Chicken Tortilla Soup

1 pound shredded, cooked chicken (or 1 pound of cooked boneless chicken breasts, cubed (which I prefer))
1 (15 ounce) can whole peeled tomatoes, mashed
1 (10 ounce) can rotel (spice level is your preference)
1 medium onion, chopped
1 (4 ounce) can chopped green chile peppers
2 cloves garlic, minced
2 cups water
1 (14.5 ounce) can chicken broth
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon salt
1/4 teaspoon black pepper
1 bay leaf
1 (10 ounce) package frozen corn
1 tablespoon chopped cilantro
7 corn tortillas
vegetable oil


Place chicken, tomatoes, Rotel, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours. (I personally prefer low for longer)

With 30 minutes left on the soup:

Preheat oven to 400 degrees F (200 degrees C).
Lightly brush both sides of tortillas with oil.
Cut tortillas into strips, then spread on a baking sheet.
Bake until crisp, about 10 to 15 minutes.

To serve, sprinkle tortilla strips over soup.

This isn't a family passed down recipe or anything, it's one I found online a few years ago and have used ever since. Best chicken tortilla soup I've ever had. Of course you can always substitute the tortillas for plain ole corn chips, it's your call.

Ham & Beans (crock pot)
1# dry beans (lima, navy or pinto) "look" to remove ugly beans or debris; soak overnight in refrigerator covered with water. Rinse again before placing in pot.
1 medium-large onion, chopped
1 tsp dry mustard
1/2 tsp salt
1 tsp black pepper
1/4# to 2# ham chunks (fully cooked)
water to cover fully.
Low for 7-10 hrs or high for 4-5 hrs. Done when beans are just done; best not to overcook.
If using a ham bone, remove about half way through, partly cool, then return removed good meat to pot.

This recipe is a good way to use up the last of a fully cooked spiral cut ham.

Use Anasazi Beans and you won't have to soak them overnight. Also, instead of water, use chicken stock to cover the beans.

Pork Chops and Beans

Take a couple of pork loin chops throw them in the crock pot along with a can of baked beans, a can of mexican corn, and a cup of salsa. Salt & Pepper to taste.

Let it cook about 8 hours.

You can double the recipe if needed.
Original recipe called for pork n beans, but I really like the Bush's baked beans better.

Here's a very easy and tasty recipe.

2x4

2 cans of kidney beans or pinto beans.

2 cans of minestrone soup.

2 cans of Rotel

2 pounds of browned hamburger.


Just mix them together and bring to a boil. Let it simmer just a few minutes and it's ready to serve.

I don't use a recipe when I make ham hocks and beans, I just put a hame bone or two in a pot with beans and water, and let it simmer all day. sometimes I add extra ham.
