Thanks very much guys. These responses are exactly what I was looking for. I am looking for a full set. Now I get to look at all these suggestions and go from there. Again, I really appreciate it.

My most recent experience is with Wusthof kitchen knives, made with steel from Solingen Germany. I purchased a 3" paring, a 5" utility and a santoku slicer separately at a Bed Bath &Beyond store here in Tulsa along with a long sharpening steel to keep them honed. Worth every dollar I spent. Highly reccomend Wusthof.

Rethink the 'set'

Get a well made (Shun, Viking, Henkels etc.) Santoku and paring.

If you are good with those 2 knives you may realize that a 'set' isn't necessary.

I made this switch years ago. I can do anything with my Santoku.
