I usually take an old recipe for squirrel and rabbit... Egg/flour wash/dip and fried up in beef lard. Nothing better than one animal cooked in another. Though roasted over a wood fire is a close second.

Quail the same way fried. Tastes like a better chicken

Never been much into squirrel, but I ran rabbits with beagles for many years when we had rabbits.

Saved, and deboned the back legs, and the back straps.

The back straps got bacon rolled over them, and grilled or fried, the back legs generally got beat up with a meat hammer, and made into chicken fry'd steaks.
