Seeing as we're heading into Mad Max times I believe I'd want big and heavy. Oh and if you have more time on your hands than you know what to do with, I can certainly alleviate that issue.. Time is something I could use more of..

Easy answer....LS it. Any 4.8 or 5.3 truck engine would work great. Find a LM4 or L33 5.3 to get an aluminum block. Heck, 5.7 LS1/LS6s are getting very reasonable since everyone wants an LS3 or even an LT motor now. If you want simplicity, put a carb manifold on it...or the better option Holley Terminator X and keep the EFI.

I would not try to tow more than 1500lbs with a cj7. It’s the short wheelbase in tj yj and cj that is the issue.
This is definitely something to think about. My 2014 Jeep JK Wrangler is only rated at 2000 lbs max towing capacity. I can't imagine the CJ7 would be rated any better. I could be wrong though.

It’s simply the wheel base. Any short wheel base wrangler is (yj’s to the jls) are rated max 2k lbs towing. The ljs and unlimiteds are rated to 3500 max. Not sure what the Cjs are but it’s not more than 2k. I won’t do more that 1500 in my tj. Gets scary quick.

There's a ton of 4BT in 66-77 broncos and it does everything folks ask for with good MPG. It's just loud in that application, there's zero engine bay or interior insulation to help with engine noise. Usually have to scrap the mechanical fan and go with an electric fan. I've seen quite a few in Jeeps as well.

I looked up wheelbase on CJ7 and it is 93.31"

Looked up 1982 Mustang and it is 100.5" and then a 1980 Pinto 94" wheelbase.

I hauled good loads behind the mustang and the pinto.
Both pulled fine but stopping was a chore.
Trailer brakes would have been sweet.

There are some old fixer upper 4 doors around like a 1957 chevy.

I do know a guy with a chevy blazer with the removable top.. he has tried to sell it to me.
I have enough on my plate.
Thinking mid 80's
