I used a very large roast not a brisket, it brined for 2 weeks half of it went to corn beef and the other half I rubbed and smoked it to make a pastrami.It does take time...
I've made it with store-bought corned beef and it's still 100% better than store-bought pastrami. It takes a lot of the time and work off the process. The only problem is finding a good cut, really.

I honestly don't remember if I've ever tried pastrami. How's it different from regular roast beef?
