It does take time...

I've made it with store-bought corned beef and it's still 100% better than store-bought pastrami. It takes a lot of the time and work off the process. The only problem is finding a good cut, really.
I used a very large roast not a brisket, it brined for 2 weeks half of it went to corn beef and the other half I rubbed and smoked it to make a pastrami.

I have done it twice, but you lose use of most of your garage fridge during the brine. So I haven’t done it again

I honestly don't remember if I've ever tried pastrami. How's it different from regular roast beef?

Brining or curing beef becomes corned beef. Then you desalinate it somewhat, rub it (usually with pepper and coriander) and smoke it to turn it into pastrami.

So pastrami is essentially smoked corned beef.

I can't believe it's almost the middle of October.
Don't care for beer but it's time for some Oktober crock pot cabbage a.k.a. Lazy Man's sauerkraut.
I know this ain't like your grandma made sauerkraut or how you send your hausfrau into the kitchen with marching orders to whip up a batch, this is down and dirty.

Take a package of sausages you like (12 - 14 ounces), Kielbasa, Polish or andouille and cut it in pieces
Put in bottom of 5 - 6 Quart crock pot along with 1/2 cup of chicken broth and 1 big onion (peeled, quartered and cut in thick slices)
Add your favorite seasoning (I like a couple teaspoons of cajun seasoning)
Cut a big head of green cabbage in bite size pieces and put on top of everything
Drizzle 4 heaping Tablespoons of apple cider vinegar on top of cabbage

Cook on low for about 4 - 5 hours; take off lid and stir about 30 - 45 minutes before it's done.

Caution 1, you will have less cabbage that you started with, like the old mountain song "Bile Them Cabbage Down"
Caution 2, you may not be fit for polite company if you eat a couple helpings of this cabbage
