Quartered a deer, and I’m sitting here looking at the hind quarter and thinking about smoking the entire thing. It doesn’t have a ton of fat.

Has anyone done this? Would I smoke it like brisket or do it like a pork butt?

I've had this article saved for years, I still haven't tried it though.

I've smoked a few. Always a bit on the dry side. The article below sounds interesting, but without the marbled fat like a domestic pig or beef, I believe it'll always be a little dry.

One thing that is good is after the smoke, remove the bones, chop rough, add some Head Country and slow roast/steam it in the oven. Makes some great BBQ sandwiches.
