Pecan Pie Anyone??

That's a good looking pecan pie. :clap3:

For an easy recipe, I've used this one attributed to Shirley Bellmon (Gov. Bellmon's wife).
I do add a teaspoon vanilla extract because I was told pecan pie is supposed to have some.

1 (9-inch) unbaked deep dish pie shell
3 eggs
1 cup white corn syrup
1 cup light brown sugar
1 cup pecans, whole

Make pie shell and chill or defrost if frozen. Preheat oven. Beat eggs. Add corn syrup and brown sugar to eggs and mix well. Pour this mixture into pie shell. Sprinkle with pecans. Bake at 350 degrees for 1 hour.

Cooking note. Pecans can be added to filling before pouring into shell. They will float to the top or they can be arranged if you have plenty of time.

Hicker nut pie is good and may be better than puh-kahn pie.

Pistachio pie was my grandpa's on my mother's side favorite.
