I think they will have the baby stay on for the long haul. It's a far cry from reality, feeding that little thing until it is old enough to eat even mashed up normal people food would be very hard in their environment. However, having a character later on in the show that knows nothing but the world they are currently living in would add another dimension to the show. She/He doesn't know any different.

Do we even know if it's a boy or girl yet?

I definitely am interested to see how someone like that behaves growing up in circumstances like that. Although I seriously doubt she or even the show lasts that long. Creeping through the woods covered in mud and zombie guts slaying he undead with a rock and the bones of her dead father. She might not even learn how to talk, with noise being a liability and all.
