Pretty much any of the gun scenes directed by Michael Mann. I will see his movies without even knowing who's in it or what it's about. When it comes to gunplay, he knows his ****!

Some of the greats have already been mentioned, but another one of my favs:

Tombstone - The showdown with Curly Bill where Kurt just walks through the river saying "No. No! NO!" and drops half a dozen guys.

The scene was great, but the follow up was even better, "Have you ever seen anything like that?" "Hell, I ain't never heard of nuttin' like that!"

"That'd be William Munny, out of Nebraska - killer of women & children."

"Yeah, I've killed women & children; killed most everything that walks or crawls at one time or another, and now I'm here to kill you, Little Bill.....

Who owns this establishment?"

"I do." [BOOM]

"You cowardly son of a ***** - you just shot an unarmed man!"

"Well he shoulda armed himself if he's gonna decorate his saloon with my friend....

Now any man don't wanna get killed better get on out the back."

The one that comes immediately to mind is the scene in Apocalypse Now beginning with the gunships coming in over the beach, blaring "Ride of the Valkyries"...
