Pretty much any of the gun scenes directed by Michael Mann. I will see his movies without even knowing who's in it or what it's about. When it comes to gunplay, he knows his ****!
Some of the greats have already been mentioned, but another one of my favs:
Tombstone - The showdown with Curly Bill where Kurt just walks through the river saying "No. No! NO!" and drops half a dozen guys.
The scene was great, but the follow up was even better, "Have you ever seen anything like that?" "Hell, I ain't never heard of nuttin' like that!"

+1 Duvall levels a guy, through a barn wall, with both barrels.
Back then those weren't 12ga but 10ga coach guns, that looked like it hurt a'little!!!!!!
I also like Legends of the Fall when the Sharps was brought to bear on the crooked cop!!!
