I tried the caramel recipe this evening, and it tastes incredible but didn’t firm up for some reason. It’s pretty thick but not “firm”, so I’m planning to use for a topping on ice cream if I don’t just eat it with a spoon.

Sounds like it would be great on ice cream. I suspect you didn’t get it quite hot enough. Candy is a funny thing and a degree or two can make a world of difference.

I definitely figured it was operator error, because the flavor is great. I kind of wondered if the weather would have any affect on it, because it was really humid today. My Grandmother wouldn’t make divinity if the weather wasn’t just right.
