I tried the caramel recipe this evening, and it tastes incredible but didn’t firm up for some reason. It’s pretty thick but not “firm”, so I’m planning to use for a topping on ice cream if I don’t just eat it with a spoon.
I definitely figured it was operator error, because the flavor is great. I kind of wondered if the weather would have any affect on it, because it was really humid today. My Grandmother wouldn’t make divinity if the weather wasn’t just right.Sounds like it would be great on ice cream. I suspect you didn’t get it quite hot enough. Candy is a funny thing and a degree or two can make a world of difference.
