Liver is supposedly very high in cholesterol. A cardiologist once said 1 serving was equal to eating a dozen eggs in one sitting. I never liked liver as a kid, mom didnt know to soak it in milk so it tasted really strong. I recently tried it again after soaking it and it was really good.
Your exactly correct, it is high in dietary cholesterol, but most folks don't have a steady diet of it, so it's not a big issue apparently.
The health benefits of eating liver is pretty substantial.

Highly recommend the honey rub followed by your favorite BBQ sauce 1 hour before done. Very tasty. Hint of sweet and then the BBQ sauce

Looks tasty.

We cook bacon in a pan, pour the grease out, cook the brussel sprouts, crumble the bacon and put it back in and when they are almost done and drizzle honey into them. Really perks up the taste.
