Debone, then slice thin strips across the grain. Marinate in soy sauce for an hour, stir-fry on med-high heat with onions, chopped garlic and fresh ginger.
Set stir-fried ingredients aside, now stir-fry bell pepper, green onion, chopped bok choy, and eggplant. Add soy sauce/fish sauce to taste(for slatiness)
Add dog, onions,etc back in and toss with veggies.
Serve over white (preferably Jasmine) rice.
(this is also a great recipe for noisy children and all cats)
