Cossey's Custom Cut Meats in Mustang will order them for you. I got two 4-rib plates in a cyro-pak from them, about $50.

the way many good butchers cut beef ribs, there is a large portion of meat on each rib...like a steak hanging off each rib...in some cases, $10 per rib is a good deal

I have about 4 racks in my freezer. I put them in the crockpot and get every speck of meat off to use for chopped beef sandwiches.

That's what I do. Slow cooked in beef stock and French onion soup. Pull out the bones and strain. Pile meat on a hoagie with Swiss and take that liquid and that's the au jus. Works great.

Try it. It's awesome. The bones simmering in all that liquid makes damn good dripped beef!

1 can beef broth
1 can French onion soup
12 oz dark beer
2 - 3 short ribs

Add to crock. Cook low 8+ hours. Strain. Done.

There is a custom butcher shop two miles up the road from us. I'll check to see if he can get us some.
