I've had good and bad.............. no point in testing it any further for me. :) Trap too many of them to have much interest in eating them.

Had jerky once, wasn't bad. If you were not told you would probably guess it was beef jerky. This was also in an area with mainly corn fields around so they had a mostly grain diet anyway, now a city coon on the other hand. . . Pass. If it's been eatin trash and diapers I don't want anything to do with it.

I've heard it's really good when cooked properly, how was it?

What's your processing, cooking method?
It was great,
Skin and gut as fast as possible, remove fat, wash away blood and remove glands from front and rear legs, then freeze in fresh water.

I parboil mine in Cajun crab boil for spiciness and tenderizing then grill on very high temp to char slightly and add BBQ sauce for flavor of choice.... Simple yet effective
